Our aged chevres are handmade on the farm in the French tradition, using milk from our prize-winning herd of happy dairy goats.
Chevrotin
A unique, lightly pressed, Grana style tome. As the cheese matures it is sweeter, with mineral notes.
Aged 3-12 months.
Sold as a full wheel, approx. 5-6 LBS.
Tommes, Natural
Made from pasteurized goats milk. Aged several weeks. Slight caramel overtones, but still creamy on your palate.
Pyramids, Ashed
Pasteurized goats milk. Similar to a Valencay. The ash changes the pH of the rind and allows the cheese to age yet stay soft. Reminds us of the wonderful coast of Maine with the clear air and ocean breeze!
Chevre Bricks, Plain
Pasteurized goats milk. Aged several weeks. Balanced and complex. Firm, yet can be sliced.
Chevre Bricks, Walnut
Pasteurized goats milk. Aged several weeks OR can be eaten fresh. The first time we tasted 'le bricque" in Provence, we said we must learn how to make these.
Aged Bricks, Blueberry
Pasteurized goats milk. Aged several weeks. We loved these bricks in Provence! Slice and warm, then place on top of a salad of greens.
Chevre Bricks, Cranberry
Pasteurized goats milk. Fresh or aged several weeks. The tartness of the cranberries complements the smoothness of the chevre, and it is beautiful to look at!
